Cheesy Garlic Roasted Cabbage Wedges

Crispy around the edges, tender in the centre, and packed with savoury garlic flavour, these roasted cabbage wedges make a delicious side dish for almost any meal.

Despite their cheesy taste, they’re completely plant-based. Nutritional yeast provides the rich, savoury flavour without using dairy, while garlic, rice vinegar, and coconut aminos create a tangy, satisfying coating.

A Little About Garlic: 
Garlic
 has been used in cooking and traditional wellness practices for thousands of years. It contains antioxidants and naturally occurring compounds that are being studied for their potential role in supporting heart and immune health.
For the best flavour, use freshly minced garlic rather than the pre-chopped garlic sold in jars.

Spice it up:
If you enjoy a little heat, add one or two dashes of sriracha—or a pinch of red pepper flakes—to the garlic mixture.

Cooking time: Approximately 30 minutes

Ingredients
  • ½ large head of red or green cabbage
  • 6 tablespoons nutritional yeast
  • 4 garlic cloves, finely minced
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons rice vinegar
  • 1 tablespoon coconut nectar
  • ½ teaspoon sea salt
  • Optional: 1–2 dashes of sriracha or a pinch of red pepper flakes
Instructions
  1. Preheat the oven to 425°F (220°C). Line a large, rimmed baking sheet with parchment paper or lightly coat it with oil.
  2. Keep the cabbage core intact and cut the cabbage into eight evenly sized wedges. Leaving part of the core attached will help the wedges hold their shape while roasting.
  3. In a small bowl, combine the nutritional yeast, minced garlic, olive oil, rice vinegar, coconut nectar, sea salt, and optional sriracha or red pepper flakes. Stir until a thick coating forms.
  4. Arrange the cabbage wedges cut-side down on the prepared baking sheet. Brush the garlic mixture generously over all sides of each wedge, including the bottoms.
  5. Roast for approximately 20 minutes, or until the undersides and edges begin to turn golden brown.
  6. Carefully turn the wedges and roast for another 10 minutes, or until the cabbage is tender and caramelized around the edges.
  7. Remove from the oven and serve warm.
Serving Suggestions
Serve these cabbage wedges with grilled chicken, fish, tofu, lentils, or your favourite plant-based protein. They also make a flavourful addition to grain bowls or can be enjoyed on their own as a warm vegetable snack.

Storage and Reheating
Store leftovers in an airtight container in the refrigerator for up to three days. For the best texture, reheat them in a 400°F (200°C) oven or air fryer until warmed through and slightly crisp.
