Black Bean Quinoa Bowl
This simple salad “bowl,” – is packed with Tex-Mex flavour and easy to put together. It makes a meal on its own, but also is a tasty side dish with grilled chicken or fish.
(2 main dish/4 side-dish servings)
Place the quinoa in a strainer and rinse under cool running water. Let drain well.
Bring the water to boil in a small saucepan over medium heat. Add the quinoa, cover, and reduce the heat to low and allow to simmer until all the water is absorbed about 10-12 minutes.
Remove from heat and allow to cool for 15 minutes.
Meanwhile, combine the oil, lime juice, chilli powder, and cilantro in a large bowl. Mix together well and stir in the beans, tomatoes, peppers, and chiles. Add the quinoa and combine thoroughly and add salt and pepper to taste.
Place in the refrigerator to chill until it’s time to eat. DELICIOUS!
