Cranberry Apple Oatmeal Bake

YUMMY... Cranberry Apple Oatmeal Bake. 

This dish is great for a family get together or a festive occasion. You can vary the ingredients depending on the season. For this winter season you can add cranberries and plenty of cinnamon and nutmeg. Cranberries are rich in flavonoid, which has been found to possess anti cancer, antibacterial, antiviral and anti-inflammatory properties. 

In the spring you can add raisin and vanilla. It’s a forgiving dish that can be made to suit your taste. You can measure the dry ingredients the night before so all you have to do in the morning is add the liquid ingredients. While it’s baking in the oven you will have time to prepare other breakfast items.

Ingredients:
2 cups old fashion oats
2 cups of low fat skim milk
½ tsp organic vanilla
½ cup of slivered almonds
½ cup dried cranberries or dried fruit of choice
1 large unpeeled grated apple (preferred Macintosh). Apple should be firm
4 tbsp maple syrup or agave nectar cooking spray. Don’t forget to add a generous amount of cinnamon and nutmeg.

Prep:
1.Preheat oven to 400 degrees Fahrenheit. Coat a 3-quart (Large casserole dish or baking pan with cooking spray)
2.Combine all ingredients in a large bowl. If you are preparing the night before don’t add the liquids such as milk or grated apple until the morning.
3. Place mixture in casserole dish and bake uncovered for 45 minutes!
