Egg Whites & Turkey Scramble (serves 6) Try this delicious low fat, high lean protein breakfast recipe. This is one of my competition meals. Can be eaten anytime of the day: Breakfast, Lunch, Snack or Dinner.
Ingredients: 8 egg whites 1 pound / 454gm lean turkey or tofu 2 cups shredded spinach 2 tomatoes, coarsely chopped 1 clove garlic, minced or pressed Sea salt and black pepper to taste Preparation: 1. Cook ground turkey or tofu in a medium skillet until cooked through and lightly browned. Drain excess juice from pan. Place turkey in a bowl and set aside. 2. Wipe the pan clean with a paper towel. Scramble the egg whites until dry. Add scramble to cooked turkey. 3. In a small skillet coated with cooking spray, lightly sate` tomatoes, spinach and garlic. 4. In a large skillet combined all ingredients and mix until evenly distributed. Season with sea salt and pepper.
