Mediterranean Tomatoes, Olives, & Haddock Recipe

Have you been looking for a new healthy, nutritious and easy to make weeknight meal?

If so, this Mediterranean-inspired fish bake with tomatoes and olives might be exactly what you were looking for. Even if you don't like tomatoes or olives, don't worry!

My recipe includes olives and tomatoes, but don't be afraid to experiment with a more favourable alternative. 

​In this post, I will provide you with all of the necessary ingredients, meal preparation instructions and even recommend a few side dishes to compliment this delicious meal. 

Ingredients Required

Below I have listed the necessary ingredients required to make this recipe. If you are to follow these quantities exactly, this dish will serve 6 people.

Also, this meal works with any white fish – cod, pollock, halibut, mahi-mahi, you name it (it might even be fun to experiment with different types of fish to figure out what you like the most). 

Ingredients include; 
  • 1½ lbs (700 grams) haddock fillet
  • Kosher salt and ground black pepper
  • ½ lemon, juiced
  • 1 cup (200 grams) halved cherry tomatoes
  • ½ cup (60 grams) pitted olives
  • 3 Tbsp yellow onion, minced
  • 3 garlic cloves, minced
  • 3 tsp Italian seasoning
  • 3 Tbsp olive oil​

Meal Preparation

It's important to make sure you follow the preparation instructions listed below.
  • Heat your oven to 425ºF/220ºC
  • Spray a 9”x13” (23 cm x 33 cm) baking dish with nonstick spray
  • Pat the fish dry and sprinkle both sides with salt and pepper
  • Place the fish in the baking dish
  • Squeeze the lemon juice over the fish
  • In a medium bowl, combine the tomatoes, olives, onion, garlic, Italian seasoning, olive oil, and stir to mix well
  • Pour the tomato mixture over the fish, smothering the top
  • Bake for 15-20 minutes
  • Fish is done when it flakes easily with a fork
  • Remove from the heat and serve

Finished Meal

In addition to this amazing dish, you can also serve it with a few of my favourites, such as quinoa or cauliflower rice and a salad.

Not only will this provide a well-rounded meal for your family or guests but one they will be asking for again.
