Eggs are usually associated with breakfast, but this delicious recipe can pass as a satisfying lunch or dinner too. No matter when you eat it, it tastes like a special occasion meal (and bonus, it only takes a couple of minutes to pull together!). (Makes 1 serving)
Heat the oil in a small skillet over medium heat. Pour in the egg mixture. Cook until the bottom is set and the top is slightly runny – about 2 minutes. Carefully flip the eggs over and continue cooking until set, another 30-60 seconds. Place the eggs on a plate and top with the avocado slices, smoked salmon, and herbs. Serve and enjoy!
